Gajar ka Halwa, also known as Carrot Halwa, is a traditional Indian dessert that is loved by everyone for its rich, creamy, and indulgent taste. Ingredients:

  • 1 kg fresh carrots, grated
  • 1 liter full-fat milk
  • 1 cup sugar (adjust according to taste)
  • 1 cup Rosier A2 ghee
  • 10-12 cashew nuts, chopped
  • 10-12 almonds, chopped
  • 1 tablespoon raisins
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • Chopped pistachios for garnishing

Instructions:

1. Prepare the Carrots

Wash, peel, and grate the carrots using a grater. You can also use a food processor to grate the carrots quickly and uniformly.

2. Cook the Carrots

In a heavy-bottomed pan or kadai, heat 1/4 cup of Rosier A2 ghee. Add the grated carrots and sauté on medium heat for 8-10 minutes, stirring continuously.

3. Add the Milk

Once the carrots are slightly cooked and change color, add the full-fat milk to the pan.

4. Cook the Mixture

Cook the carrot and milk mixture on medium heat, stirring occasionally, until the milk is absorbed and the carrots are soft and cooked. This may take approximately 30-40 minutes.

5. Add the Sugar

Add the sugar to the cooked carrot mixture and mix well. Continue to cook on low heat until the sugar is completely dissolved and the mixture thickens.

6. Add the Dry Fruits and A2 Ghee

In a separate small pan, heat the remaining A2 ghee. Fry the chopped cashew nuts, almonds, and raisins until they turn golden brown. Add these fried dry fruits along with the cardamom powder and saffron strands (if using) to the carrot mixture. Mix well.

7. Cook the Halwa

Cook the halwa on low heat, stirring continuously, until it reaches a thick and pudding-like consistency, and the ghee starts to separate from the mixture. This may take another 20-30 minutes.

8. Garnish and Serve

Once the halwa is ready, garnish it with chopped pistachios.
